Synaptic Illusion - A Sour Saison
Berries, fruit and spice with a little bit of funk and a whole lot of tart; a little farmhouse ale with a serious wallop of refreshing flavour and acidity.
The wort was soured with some lacto delbruckii I whipped up in the back room. Boiled the wort for 30 minutes, cooled then fermented on a 4th yr-running Saison strain originating from a culture of Wyeast 3711 French Saison - not really sure what it is now, it’s morphed. Aged on oak to finish = money. Regardless, a fun beer all around!
